He modernised the foundations of pâtisserie alongside Gaston Lenôtre and founded his own brand with Charles Znaty in 1998. Hermé was awarded the title of World's Best Pastry Chef by The World's 50 Best Restaurants in 2016 and was named the fourth most influential French person in the world by Vanity Fair.
